Easter Cheesecake Recipe,

Ingredients:

  • 250g digestive biscuits, crushed
  • 100g butter, melted
  • 500g cream cheese, softened
  • 100g caster sugar
  • 2 tsp vanilla extract
  • 400ml double cream, whipped
  • 50g icing sugar
  • Easter candy for decoration

Directions:

  1. In a bowl, mix the crushed digestive biscuits with melted butter until well combined.
  2. Press the mixture into the bottom of a 23cm springform pan, making sure it is evenly distributed.
  3. In a separate bowl, beat the cream cheese, caster sugar, and vanilla extract until smooth.
  4. Fold in the whipped double cream until well combined.
  5. Pour the mixture over the biscuit base and smooth it out with a spatula.
  6. Cover the pan with plastic wrap and refrigerate for at least 4 hours or until firm.
  7. Once the cheesecake has set, remove the plastic wrap and gently release the sides of the springform pan.
  8. Dust the top of the cheesecake with icing sugar and decorate with Easter candy.
  9. Slice and serve chilled.
