These faux ‘meatballs’ are ideal for vegetarians and vegans. They are also a great alternative for those giving up meat for health or fitness reasons, trying to introduce more vegetables into their child’s diet, or wanting to have meat-free days to cut costs.
The recipe is simple and easy to follow, and the faux meatballs can be batch cooked for the freezer.
Ingredients (makes 10-15 medium/small balls)
700g (2 large) potatoes
300g (3 medium) onions
500g (3 medium) courgettes
300g (4 medium) carrots
1/2 cup of bread crumbs (toasted)
Salt
A bit of flour
Oil for frying

Method
- Peel the potatoes, grate them, and strain them
- Grate the onions, carrots and courgettes, but do NOT strain them
- Mix all the vegetables in a bowl with the olive oil, bread crumbs and salt
- Cover the balls in flour
- Fry in plenty of hot oil
Try making smaller balls to add to soups, or flatten for grilled/barbecued burgers. Experiment with different ingredients like broccoli or beetroot, add herbs and spices….
Faux ‘meatballs’ can be used in the same way as you would use their meat counterparts
